Hi
Would choosing to go to one of the london universities offer better career and academia prospects than say going to a regional university?
Any replies would be greatly appreciated.

YES!! If you want to go into academia, where you get your llm is crucial...

UCL offers a programme for law teachers which is an add -on for those who want to become academics. It is not part of the llm but you get a certificate.

If you are serious about an academic career, get something published. It's never too early to start.

If you are looking at academia in the UK you do not have to restrict yourself to the London universities, though I would suggest that getting an academic job in the UK these days on just an LLM would be tough. More and more, new academics have a PhD (as well as teaching experience gained whilst studying); some ex-practitioners may make it in to academia too. Most universities offer teaching courses to their post graduate students, though I suspect they are targetted at PhD (or MPhil) students. Good luck with it, whether you go for practice or academia.
